當年底達瑞典時,雖然早已耳聞瑞典的高消費,但還是被文具店裡價錢是台灣五倍的自動筆下了三跳,難怪上課時隔壁座位的同學很喜歡研究木不子鉛筆盒裡各色各樣的筆和立可白,不過還好瑞典的基本民生必需品ex:馬鈴薯、麵粉、冷凍蔬菜等等,常常會有特價。就這樣,當時每天的廚房作業就是想辦法把馬鈴薯跟麵粉變成不同且美味的料理 :P
雖然身處瑞典第四大都市林雪平,但亞洲食材非常難買,每一次懷念台灣蛋餅時,就會做這款隨意蛋餅皮來解饞,畢業後陸陸續續上了很多廚藝課,學會了燙麵糰做出蔥油餅,烙出薄薄的麵餅皮,但還是很懷念用冷水加麵粉做出來的隨意蛋餅皮。吃在嘴裡總會想起當年那無憂無慮的留學生生活,不管物價再高,卻始終怡然自得地活在廚房世界。

木不子廚房做實驗
食材:
低筋麵粉 3湯匙(45cc) ,若改用高筋麵粉請增加水分10cc,因為高筋麵粉吸水性較強;此外,要留意變免攪拌過度出筋。
飲用水 3湯匙(45cc)
雞蛋 1顆
青蔥 1湯匙
橄欖油 1/4茶匙

步驟:
1. 麵粉加水攪拌均勻。

2. 平底鍋放入橄欖油讓鍋面均勻沾上橄欖油,開中小火,麵粉糊到入鍋中,搖晃鍋身成圓餅狀。

3. 趁麵粉糊尚未熟透時,再用鏟子將麵粉糊弄薄,煎熟備用。

4. 雞蛋與蔥花打散倒入鍋中,再鋪上蛋餅皮,煎煮。

5. 蛋餅捲起,起鍋切塊搭配醬油享用。
木不子的小分享:
1. 冷水加麵粉直接煮的蛋餅皮比較沒有韌性,太厚很容易折斷。
2. 步驟2&3如果尚不熟悉,可以先不要開火,待麵粉漿均勻鋪平後再開始加熱。可避免因為動作過慢,煎出厚厚的蛋餅皮。
3.此分量做出來的蛋餅皮直徑約18公分。
4.喜歡起司、鮪魚、玉米等配料的朋友可以隨興添加。
5.搭配醬油一起食用故過程不添加鹽巴。

吉祥如意,一起朝真食人生的目標邁進吧! 關於酥脆蛋餅皮的做法, 自己的經驗用豬油下去做比較酥,小時候媽媽會在家裡會自己炸豬油,炸完的豬皮脆脆的加鹽巴就是很棒的零嘴.改天找到豬油,木不子再來實驗酥脆的蛋餅皮.
